Jumbo Molasses Cookies
- 175 grams soft brown sugar
- 100 grams butter
- 300 grams molasses
- 150 milliliters water
- 450 grams plain flour/all-purpose flour
- 1 1/2 teaspoons salt
- 1 teaspoon bicarb.
- 1 1/2 teaspoons ground ginger
- 1/2 teaspoon cloves
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ground allspice
- sugar for sprinkling
Preheat the oven to 180C/350F/Gas mark 4
Cream the sugar and butter. Add the remaining ingredients. Mix well to a dough. Roll the dough ¼ inch thick. Cut rounds with
2 ½ inch cutter and place on well greased baking trays. Sprinkle with sugar. Bake for 10-12 minutes. Cool on a wire rack.
