Preheat the oven to 160C/325F/Gas mark 3
Cream together the icing sugar and margarine. Add the rest of the ingredients except the cherries and mix thoroughly. Flatten teaspoons of the dough with your hands, and place a cherry on each circle and cover by pinching the dough around it. Roll into balls and place on greased baking trays. Bake for 35 minutes. Roll the Cookies in caster sugar while they are still hot. Cool on wire racks. Makes 36 Cookies
