Vegan Cookies

Yankee Molasses Puffs (vegan)

Preheat the oven to 180°C/350°F/Gas mark 4

Sift together the flour, salt and spices. Cream the margarine, sugar and Soya milk. Gradually add the dry ingredients. Add the molasses and lemon juice. Dissolve the baking soda in the water and add to the mixture, add a little extra flour if necessary.

Drop by teaspoonfuls on a greased baking tray and sprinkle with sugar. Bake for 8-10 minutes. Leave a few minutes and transfer to a wire rack to cool.
