Preheat the oven to 180C/350F/Gas mark 4

Mix the flour, salt, bicarb, lemon juice and sugar and mix thoroughly. Then rub in butter until the mixture is crumbly. Add enough milk to make a dough. Transfer the dough to a lightly floured surface and roll out to 3mm thick. Cut the cookies with 2 inch cutter then bake them for 15-20 minutes, or until golden brown.

These make excellent bases for cheesecakes.
