Spicy Fruit Mince Rolls

Preheat the oven to 180C/350F/Gas mark 4

Sift the flour and spices into a large bowl. Rub in the butter, stir in the rind. Add the lemon juice and enough water to make the ingredients cling together. Turn onto a lightly floured surface, knead gently until smooth. Cover and refrigerate for 30 minutes.

Roll the dough on a lightly floured surface until 2mm thick. Cut 5 ½ cm rounds from dough; roll each round to an oval about 8cm long. Drop 1 level teaspoon of combined fruit mince and rice flour onto centre of each oval. Lightly brush 1 end of each oval with water, roll up. Lightly brush seam side of each roll with water, roll in combined sugar and extra cinnamon.

Place the rolls about 3cm apart onto greased baking trays. Bake for about 20 minutes or until lightly browned. Cool on the trays. Makes about 40.
