Preheat the oven to 180C/350F/Gas mark 4

Prepare the filling by boiling the ingredients together, until thick (approx. 10 minutes), in a small pan. Allow to cool.

Cream together the butter, sugar and sour cream. Add the vanilla essence and milk. Sift together the flour, baking powder and bicarb. Add the oatmeal. Stir gradually with the creamed mixture. Mix well.

Place a tablespoon of the mixture on a baking tray and flatten. Place a teaspoon of the filling on the dough and cover with more dough. Press around the edges with a fork to seal.

Bake for 12 - 15 minutes. Place on a wire rack to cool.
