Preheat the oven to 180C/350F/Gas mark 4
Sift the flour, ginger and salt together. Cream the butter, add the sugar gradually, beating well. Add the flour mixture gradually, mixing well until blended. Stir in the cream. Divide the dough in halves. Place on greased baking tray. Flatten to ½ inch thick. Mark into wedges. Flute the edges and prick the centres with a fork. Bake for 20 minutes. Cut into wedges while warm. Allow to cool on the trays .
