Preheat the oven to 190C/375F/Gas mark 5
Cream together the butter, rind and sifted icing sugar until light. Stir in sifted flour, cream and juice. Spoon the mixture into a piping bag fitted with 1 cm star tube. Pipe 2cm rosettes of mixture about 3cm apart onto greased baking trays
Top with a little mixed peel. Bake for about 8 minutes or until lightly browned. Stand for 5 minutes before lifting onto wire racks to cool. Dust with sifted icing sugar. Makes about 75.
