Lincoln Buttermilk Cake

Preheat the oven to 180C/350F/gas mark 4

Use a 900g/2 lb loaf tin.

Grease and line the loaf tin. Rub the butter into the flour and add the other dry ingredients. Warm the syrup and pour into the centre. Mix to a fairly soft dough with the buttermilk. Bake in either two bread tins or in a deep slab cake tin for about one hour. Test with a warm knife. Allow to cool in the tin for fifteen minutes before turning out on a wire rack.
