Light Dried Fruit Cakes

Tyrol Cake

Preheat the oven to 160C/325F/gas mark 3

Use a 15cm/6 inch round cake tin.

Grease and line the cake tin. Put the butter, flour, baking powder and cinnamon in a bowl and mix together until the mixture resembles fine bread crumbs. Add the washed fruit and sugar to the mixture and stir thoroughly. Make a well in the centre. Mix the milk and syrup and pour this into the well of the flour mixture. Gradually work in all the dry ingredients, adding a little more milk if necessary, just sufficient to give the mixture a dropping consistency. Pour the mixture into the prepared tin and bake for 1 3/4 to 2 hours or until the cake is well risen and firm to the touch.
