Pumpkin Date Cake

Preheat the oven to 180C/350F/gas mark 4

Use a 20cm/8 inch square cake tin.

Grease and line the cake tin. Cream the butter and sugar together until light and fluffy. Stir in the sour cream. Add the dates, coconut and pumpkin and mix well. Finally add the sifted flour, baking powder and milk. Mix until all the ingredients are well combined. Spread into the prepared tin. Bake for 1 1/4 hours. Stand for ten minutes before turning onto wire rack to cool. Dust with sifted icing sugar.
