Eggless Cakes

Cakes with Fresh Fruits

Plum Cake.

Preheat the oven to 200C/400F/gas mark 6

Use a baking sheet.

Grease the baking sheet. Sift the flour into a large bowl and rub in the butter until the mixture resembles breadcrumbs. Add the sour cream and most of the milk, reserving a little milk for brushing. Mix the ingredients in the bowl to a soft dough. Cut the dough in half, roll each half out on a lightly floured surface to a 20 cm/8 inch round. Place one round on the baking sheet.

Place plums, sugar and orange juice in a bowl and mix well. Arrange the plums over the dough. Cover with the remaining dough round to cover the fruit and seal the edges well. Brush with the reserved milk, and mark into 8 to 10 wedges. Bake for 35 to 40 minutes. Serve warm or cold.
