One-stage Fruit Cake

2 cups white self-raising flour
1 teaspoon mixed spice
1/2 cup soft butter
1/2 cup glacé cherries, chopped
1/2 cup currants
1/2 cup sultanas
2 tablespoons cut mixed peel
1/2 cup soft light brown sugar
4 tablespoons sour cream
1/2 cup milk
butter for greasing

Preheat the oven to 180C/350F/gas mark 4

Use an 18cm/7 inch round cake tin.

Grease and line the cake tin. Sift together the flour and mixed spice. Put all the ingredients in a bowl, stir, then beat until smooth. Spoon the mixture into the prepared tin and bake for 2 hours. Cool on a wire rack.
