Cakes with Fresh Fruits

Apple Buttermilk Cake

Preheat the oven to 200C/400F/gas mark 6

Use two 18cm/7 inch cake tins.

Grease and line the cake tins. Cream together the butter and sugar, add sour cream. Sift the remaining ingredients and fold in. Include any bran that remains in the sieve. Pour the mixture into the cake tins, level out. Spread the topping ingredients over one of the cakes. Bake for 10 minutes, and then lower the heat to 180C/350F/gas mark 4. Bake for a further 30 minutes. When cool sandwich the cakes together with jam or butter cream.
