Great Cakes Without Eggs.

A unique publication for people who have an egg-free diet.

Eggless cakes were very much a part of growing up. My mother was strict in her diet, and would never use eggs. We were a Hindu family in South Africa. When I came to live in England, I decided to try my hand at all kinds of cake recipes - without eggs. You can judge the results for yourself - in 'Great Cakes Without Eggs.    

There are 216 recipes. About 1/4 of the recipes are Vegan, and the others are lacto-vegetarian. We spent four years testing and putting together this collection. This new edition incorporates all the feedback we have received since we published the original edition in 1988. 
The measures are given in US Cup measures, Imperial and Metric. There is a full index of all cakes, and also of all ingredients, with information about International compatibilities.
Great Cakes has sold nearly 5,000 copies in England and Europe.  This new version takes special account of US users. We hope also to reach readers in India, Australia, New Zealand and South Africa. 

I am a follower of the Vaishnava culture of India, and our diet excludes meat, fish and eggs, but includes milk and milk products. After extensive research, my husband and I found only two other books of eggless baking in publication.  One is from India, and is written by Indira Kakati. One is South African, published by the Radha Soami group.  Neither specialises in cakes. I hope our humble effort will fill the gap.
